Strawberry Sun Preserves
2 tablespoons lemon juice
1 quart hulled strawberries
4 cups sugar
Combine all ingredients. Heat slowly to boiling point and cook rapidly for 8 minutes, stirring slowly. Pour berry mixture into shallow glass container, slip nylon panty hose over dish. Place in sunshine, stirring gently occasionally. Bring in at night. At end of 2-3 days, preserves will be thickened. Pack in sterilized jars, seal or freeze. Makes 4 ½ small jars.
