The work horse of seaming knits is mattress stitch. A stable strong seam worked from the public side of the fabric. Because you can easily skip rows as you work, not only are beginner goofs hidden but unequal lengths of fabric can be joined.
 
The seam line can also wander inside the fabric, necessary it there is an increase or decrease along the fabric edge. Keep in mind that that a knit stitch has those right and left bowed legs and if you move a half stitch in on one side, the other side should be adjusted by a half stitch also. If maintaining width is an issue, then you have to decide how critical a perfectly matched appearing is in relationship to the loss of width.
 
Depending on the yarn, removing it can usually be accomplished by spreading the seam and pulling out or cutting 2-3 stitches down. Mohair must be teased out one loop at a time.
 
Mattress stitch is a semi flexible forgiving seam. Because you are generally joining a whole stitch from each side, it is a thick seam. This is a bundle of five to six strands of yarn plus the seaming yarn.
